The week started out quietly – and created an opportunity for me to write up notes from a GREAT meeting held a few weeks ago. The Chamber was approached by the Minnesota Food Truck Association to examine bringing food trucks to Richfield. The MFTA strongly supports the idea that food trucks are new businesses that offer consumers more dining options, create jobs, and improve the overall quality of life in their communities.
If you’re interested in more information on the Food Truck topic, checkout the legislative report “Food Truck Freedom”; it is basically a ‘how-to’ guide for bringing food trucks to communities.
The Chamber organized a meeting with City Staff and the MFTA – it was a fun conversation at which we identified all the “players” that could potentially impact the conversation and determined that the next step will be a City Council work study session, which has been scheduled for Tuesday May 13.
This could be a tremendous opportunity to bring a fresh, exciting concept to Richfield and a great opportunity to promote Richfield at the same time!
